
For the past few months Lily has been on a peanut-butter-and-jelly-easy-mac-any-kind-of-bread diet. So naturally Eric and I were concerned and frustrated. I remembered Eric's cunning switch-a-roo the other day, and then I also remembered hearing about a book that Jerry Seinfeild's wife wrote, Deceptively Delicious. She would puree vegetables and hide them in foods that kids like to eat. So Eric and I decided I shouldn't be the only one ignorantly eating around here, so he checked it out at the library and tonight we put it to the test. I made the cheese pizza with whole-wheat pitas, pureed spinach, pizza sauce and mozzarella cheese. It took probably 2 minutes to make (I had already pureed all my veggies for the week on Saturday) and I had no dirty dishes. Really, not a one. Plus, Lily loved it! She had seconds and then when her dad came home two hours later she ate half of his. So I would say this was a success!

Bamboozled!

Eric and I have been wanting to try a place near my work that we've heard a lot of good things about called Lone Star Taqueria. So when he and Lily showed up at my work with a bag of tacos and burritos I was totally excited. Especially since I had a crappy microwave dinner in hand ready to heat.
Lily who is on her own carb/candy-only diet refused and ate yet another peanut butter sandwich. Eric and I enjoyed what we both agreed to be the best tacos we've ever had. I scarfed the whole thing down all the while telling Eric "This is the best chicken I've ever had!" "Wow this is so good, way to go Eric!" "How do they get the chicken so moist yet crispy!" On and on I went (I really enjoy eating a good meal and verbalizing it).
Little did I know Eric had pulled a fast one on me. But first, let me expand a little on my relationship with fish. I am a wanna-be fish lover. I love to eat fancy food at fancy restaurants, but when you are a picky eater, you usually come across a very limited menu. Sometimes I'll be feeling adventurous so I'll try a piece of Eric's, think it tastes good, but won't take another bite. I just picture this slimy animal with bulging eyes that I can't get it out of my head. Eric loves fish and for the past six years has tried to convince me I would too. He's encouraged me to tray many bites of crab, halibut, tuna, tilapia, lobster, you name it. I would take a bite, but never more. Never would I just order a piece of fish and scarf it down. Or so I thought.
Back to our lunch. I'm sitting there scarfing this taco down barely pausing to take a breath unless I want to tell Eric once again how amazing this taco is when I notice his look. Like he's anxious to tell me something, but waiting. Waiting for me to finish the very last bite. The second I eat up every last crumb, he spews "It's fish!". I was duped! He fooled me and I fell for it! Fell for it and loved it? Loved every moist juicy crispy bite of it! That was the best taco I've ever had and I want another!
